If you sync the device with a computer You can export all contacts or other PIM data using the Export function of PalmDesktop. You can export to several file formats like .aba, .csv or plain text.
Depending on the software that includes the future device for sure it comes with PC software where you can import all you're PIM data.
If you used other kind of data like Documents To Go files, you should sync them to the computer in order to have them in Microsoft-Office format.
Other files like ebooks (plucker, isilo, etc.), map software, etc., are a bit more difficult to use on other non PalmOS device depending on wich program you are currently using. In this case you should visit the home page of the each program in order to verify each case.
