BackupBuddy will also allow you to do single file restorations. In additon you can selectively backup. For single file restoration I use McFile to mearly copy the file back from my last backup folder...

BackupBuddy will do what you want. It will back up and restore all or just slectively. It will also make a complete backup not only on the PC your syncing to but to a SD or MMC card in your Palm....
