Any app that sorts todo's by subject?

If you mean sort them alphabetically, DateBk5 will do it manually for you. You have to find the "sort db's" checkbox buried in the preferences. Check it, uncheck it and then check it again. Exit DateBk5 and go into the ToDo app. They should be sorted.

Note that this does not sort them in the Palm Desktop.

I use Shadow (www.codejedi.com) for my todos, and it lets you "sort" them any which way with tags and filters and categories. The power and flexibility are incredible!
