I have worked out a method for creating Overlay *.prc making it possible to get color icons when assigning Applications to the T3 DIA slots. It even works for the applications contained in ROM:

The overlay Prc created are the same as the ones in ROM but with color icons added from the original application. When installing these overlay *.prc, e.g. Calendar-PDat_enUS.prc for calendar, they will override the overlay files in ROM.
My plan is to create new overlay files for all the ROM applications. (For those interested I have created a guide in the "how to" section. Creating overlay prc for the ROM apps is a bit tricker though).
I'm a bit unsure if it will be ok to make the overlay prc public because they will contain code from the OS as well as icons. Does anybody know? The overlay files can only be used on a T3 so the value for user with other PDAs are minimal....
