Adjust fonts separetely - traditional font support?

First i want to know how can i use fonts that include traditional characters(like turkish characters) in programs like Snapper mail program? Or for simple how can i read traditional mails? :)

And how can i change fonts only database parts of the programs? I'm using Fonts4OS5 and Fontsmoother but they change all the fonts. I don't want them to change menu fonts or lists. ( I want to change Lexi-comp medical programs db fonts= there is a reader program and losts of db files separetly.)
