I am a complete NEWBIE so be gentle
I just got NX60 for my wife, and a SJ20 for myself.
Where do I find info on installing desktop software and HotSyncing them BOTH from the very same PC computer ?
Again, do remember - this is day 2 from purchase...

Just follow the instructions. Insert the CD that came with each one. It will know that you already have a handheld when you install the second one. Still install the second one the same only you will need a different user name. When you sinc them your computer will know which one is syncing and syncs the right one. Of course this is only for palm desktop. Also, in pal desktop in the upper right corner you can choose which user info you want displayed and can change it easily. Good luck.

halphmex is exactly right. Just give each unit different hotsync names. The software will handle the rest.
You also need to make sure you install the software from each CD, as each unit needs it's appropriate driver to be able to hotsync.

What really stopped me from trying what you described was the message during the installation of the second software CD - it basically recognized that there was already Palm Desktop loaded and it asked me if I want to revert to previous version (actually both are the same). That did send some chills down my spine as I imagined my original installation removed or corrupted.

Is there a way to have multiple users on 1 pc and not be able to access each others data? I have a co-worker that just got a palm and when he first installed the palm desktop has was looking at all my data.

If you assign a password to your Clie, it should ask for a password when you try to switch to a user that has a defined password.
