Can anyone tell me how to install and run apps off memory stick with the NX80? Any help is greatly appreciated.

Install in RAM first, then moving to card with freeware Linkstart, works best for me! Linkstart will move databases with the prc file, making more space in scarce RAM.

Most third-party launchers automate the process of moving apps (and in some cases their associated databases) to the memory stick. They create a shortcut on your launcher screen that you will tap to launch the app. I would recommend that you demo a few like ZLauncher and MegaLauncher.

Just a note of clarification...While you can store and launch apps from the memory stick, you are not actually running these programs from the external media. All apps are moved to handheld RAM to run and are returned to the MS when you exit the app. This means you need to keep enough free RAM available to run the largest app stored on your MS.
